If your environment is hosted in Cloud.

Raise a Support ticket with Appian and mention the process Id & time interval from when you want to unarchive the process instances. They will Unarchive the processes for you.

There's a command-line script, if you're on-premises, for unarchiving archived processes. You'll find more information about it here:

However, you're not likely to see the tasks in your Tasks tab again. The tasks must have either been completed or cancelled, otherwise the process would not have been completed and thus would not have archived. If you have designer access, after the process is unarchived, you should be able to monitor it from the Appian process modeler.

Change the time range to ALL and check, Still, if you are not seeing it then, no other way - Contact Appian.

Setting was set to default, and I can't see those task in monitoring

No, You can't.

By the way how many days have you given for archiving.?

If you are not aware of these settings then, you might have those processes still in your system because by default it stays for 7 days.

Can you check inside your application package in the monitor tab?

I don't think so. You may need to contact or raise an Appian support ticket to get that.

You can unarchive them back. there is a plugin available for that, but you need to have process ID for those,
Have you saved process ID in your database?

Are you asking about the process which are archived, you want them back to see/track something?
