I have gone through the view's and relevant tables and they don't all have the same collation, they do match the other environments which didn't suffer the same problem. Is there anything else i can do?

RE: #1267 - illegal mix of collations

Check this article to see if there are problems with the underlying tables: https://interworks.com/blog/bbausili/2010/01/11/mysql-fixing-illegal-mix-collation

If the tables all turn out with the same collation, maybe try casting or converting hardcoded values, as mentioned in this answer: https://stackoverflow.com/a/37275524
