As data stores are the connection between records and queries, you only need to update them. It could be that there are some query database nodes which use the data source name directly, then you might need to take a look at them too. There are some other objects using the JDBC name: CSV Import, Excel Import, Document Base64 to DB. There might be some more.

If you keep the data source names the same, then there is almost nothing to do.

Hi Steve,

If I am taking the copy of existing Test environment, replacing with new RDS data source connection string, I assume that I need to replace existing data source settings with new one? i.e. If the existing data stores number around 300, I will have to do some bulk update to change the data source. Isn't it? Will it be any other objects other than data stores needs to be changed on updating data source connection pls? Query nodes too? Thanks.

AFAIK Appian uses the configured data source name to identify the DB in data store objects. When you create a new data source in the admin console and update all data stores to use this one, you should be good to go. After you did all the DB related migration steps that is.
