For some reason, i was thinking that you can only expose documents through the interface using the document function. I wasn't sure if this could be done through the process model as well. I will give it a try and see.

Load your documents to a process variable and reference that variable in the attachments field. Did you try this?

Hi, you can add a script task node before send email node and in your script task use an expression which will query your document from db.
