look up converting GMT time into your local timezone and how that affects the displayed date. it's not really "subtracting", just displaying something you weren't expecting.

Your blog post most definitely helps! On a past project our servers were running on GMT and we used the gmt() function to help keep things consistent. After reading the the documentation for local() it seems like a pretty obvious way to go, but I missed it somehow. Thanks for the post and help!
