Please refer to our documentation on Sharepoint web service operations:
forum.appian.com/.../SharePoint_Web_Services

The WSDL to use should be
http://<SHAREPOINT_URL>/_vti_bin/Appian.SharePoint.Documents.asmx?wsdl
And the operation should be DeleteFile
