You can use this link to understand how to create schedulers in Appian - https://docs.appian.com/suite/help/21.4/Start_Event.html#configuring-a-timer-trigger-on-a-start-event
You can use this scheduler to query a process report where you can filter by deadline=today and then add a new UIT that will be sent as task reminders.

However, I would recommend sending emails as reminder notifications instead of assigning a task. Assigning one more task to remind about other is not the correct use of it.
