we need more information about your use case before we can even guess at a suggestion here. what "work" are you doing, exactly, if not working on changing the interface?

What do you mean with "I do not change it online while I work"? Isn't this what you want?

All objects in Appian have version. Just load the old version and save that one will make it the latest version again. There is no need to copy stuff for editing.

While creating a new interface you can choose an option to create from an existing interface by which you can get the exact interface and few modifications will be needed according to your requirement inside the new interface created.
