Have you tried this already? Your answer would be my best guess too but I'd have to try it before being sure it will actually work - namely whether ri!taskOwner (for example) would update correctly when the task is accepted.

You can create a rule input for the task owner (user). Configure the user input node in the process model to pass the task property tp!owner into the interface. Only show links when owner is not null.

AFAIK, it is not possible to do the action before accept the task.
