Not if you use the OOTB reassign. However, if you disable OOTB reassign and build a process to handle re-assignment it is possible to log whatever you want in that process.

Hello Romie Villalobos,

If you are using the Process Centric approach there is nothing to keep a track as of now on the past Assignee. If you are so keen to have an audit for your task, and you processes can be designed to be record centric or database centric, you can have an Task Audit table where you can store the Assignee details.
