You could turn off the default task assignment email notifications and completely use custom emails instead. This way you can control the content as well as the recipients.
It is important to note that turning off task notification emails would impact across your Appian instance.

As far as I know there is now direct way to define for which tasks a notification is sent.
We disabled task notification at all but on certain tasks I send a message (escalation with timer set to now()) to a process modell which gets started and creates an email to notify of the assignment.
