It is working fine for our use case. We didn't encounter any issues so far:

One of the things to consider is process instance security. Process initiators cannot view this data, viewers and greater access can view this data.

Process history has this data.

You can use Process History plugin to get history of a specific process.

If JAVA development is an option, you may extend/create new plugin for your specific use case using public APIs

AFAIK this is not logged, or at least not in a way it is easily accessible.
