If the approval task has no relevance, then why do you need that task in the first place?

Our requirement is to create two interfaces one for customer and other for approval. Approval Task should be completed without using process model. Is this Possible or suggest any alternative way?

No. A task is always part of a process in form of a user input task.

like user input task is used for assigning task, can it configured directly via interface without using the node??

Hi, You can add a field called "Assign To" in your interface to choose the assignee and then you can use this value for task assignment.
