Emails are not being sent intermittently

We are sending email notifications to different users (not appian users) through process model, but sometimes emails are not delivered to the end user. Even the same user (email address) receives email sometime and at other time email is not delivered. We checked the logs as well but could not find anything. Is there any setting that needs to be enabled in logs to check for such cases. Any inputs please

When the node completes, the mail server accepted the email. This means there is no error in Appian. But your email travelles through multiple other mail servers doing all sorts of magic.
Are you able to dig into any log files of your companys mail server? Or ask an admin to check for incoming email from the Appian system?
