Customized Logging For Send Email Node

Question

We see that we can customize logging in Appian as per the documentation --> https://docs.appian.com/suite/help/17.3/Customizing_Application_Logging.html 
 
 I want to customize logging to see whether all recipients in the TO part of my email in the SEND EMAIL Smart Service/Node/Task/Activity received an email. How do I enable/customize logging to see this log?

I do not believe you have this logging information available in Appian, unless there's a generic logger for all information on setup/input tabs of smart services. 
 
I believe your best solution would be to set up your SMTP server that is connected to Appian to log this information for you. How to enable this logging will depend on which SMTP server you are using.
