I am looking at the quick stop service found here:

is it possible to have both the quick stop and the standard services installed?
Or do we need to make a choice which suites us better and use only one.?...

You can technically install 2 versions of Appian as a windows service by adjusting the installation script, but you will only be able to start one service, so it doesn't matter. If you know that there are maintenance windows which your team is not in control of (OS updates perhaps), then you should install the quick stop to prevent your non-Appian experts or the automated updates from shutting down the engines improperly.

Thanks Michael. I thought that might be the case,I think we will go with the quick stop for that reason.
