Hello,
I see in many Appian videos recently that they have a menu bar with information of which environment server (DEV, TEST..) the user is logged.
I would like to add that to a cloud with DEV/TEST/PRD to avoid any admin to make a change on the wrong environment. Is there any config that could do that?

This is a feature you can configure this in the Administration Console (depending on which version you're running - it's available in 19.3 onward but not sure of previous versions):
Display Site-Wide Banner - This option determines whether or not to show a banner at the of all pages in the Appian environment.
An alternative, if permitted, is to use a Browser plugin, such as the Google 'Environment Marker':
