I see that conf.suite.REQUEST_TIMEOUT_IN_SEC was removed from the Production Documentation with the release of Appian 7.3. Previously it set the amount of time before timeout between two activity-chained tasks. Is this property still valid in the latest version of Appian?...

This property should still be valid.
Consider though that increasing this beyond the default of 8 seconds might lead to extremely poor end user experience and will give the user an impression that the site is slow/hanging.
