Yes, you should be able to un-archive it in 7.5.

I would certainly hope so.... this page in the documentation had me worried:
forum.appian.com/.../Managing_Process_Archives
It says:
It is not necessary to migrate archives between patches and service pack versions. The process must have been initially archived with Appian Enterprise 5.6.1.0 or a later version.

Essentially you do not have to upgrade your process archives - they are backwards compatible. The reverse is not true though - you cannot load archives from newer version to older, although I cannot think of a use case when you would try something like this.
