For our cloud instance, whenever an error happens a notification email is sent to ALL users with System Administrator privileges. We want to change this to ONLY send error emails to ONE configurable email.

Please, advise?...

You can use Custom Alert Settings for Process Models so that a specific Group receives Process Alerts for that particular Model.
