We need to track the history of changes made to the user custom field, as we are receiving roles from GEMI in this custom field. Is there any out-of-the-box functionality to capture these changes, or are there any available workarounds? Your assistance would be greatly appreciated.

I typically implement a process to perform such management tasks. And then I have full control on who can do what and when and include a proper audit trail.
So are you saying that each time a user logs into the landing page, we need to trigger a process to capture that information?
Maybe you explain in more detail what "GEMI" is, and how the interaction between the systems works.
If GEMI is your identity management system and you control group membership there, I think that your audit should be done in GEMI, but not in Appian. What you need to check compliance for, is the way how permissions in GEMI are reflected in Appian.
And user logins are tracked in one of the system log files.
