Unfortunately there are no logs for the deleted process instances and also the 'deletion.log' file holds only the information related to objects mentioned in the following link.
forum.appian.com/.../Logging.html

Currently, there are no logs that contain deleted process instance information.

The deletion.log contains object deletion information, but does not include process instance information when one is deleted.

There is an existing enhancement request for this functionality.
