Hi,
We are running Appian 16.1 on JBOSS under Unix, is there any document I can follow in order to enable SSL protocol for Appian ?

You do this using a web server like apache. See Appian docs for more info.

We are already running JBoss as a webserver. Can you point me to the right Appian doc ?

Follow the link above and remember, you will also need restart the environment after updating the following in custom.properties:
conf.suite.SCHEME=https
conf.suite.SERVER_AND_PORT=yourdomain.com:443
