Date and time values coming from the start form to the process model does not match the values from now() function,
as date and time function gives out "date and time type" but now() function gives out "date and time with time zone type"

you can just wrap now() with todatetime() .
May be it's not related to time zone, now() gives exact time , it's gonna change for every sec . Can you explain your requirement a bit more . Are you using it for any comparisons?
There are functions action in the user time zone context, and functions not doing this.
E.g. datetime() vs. userdatetime()
Just use the one you need.
