Is it possible to apply a rule / operation to the data before it is written into the spreadsheet? For example, if in the database I had a column of integers (1, 2, 3, 4, 5), could I apply a rule (ri!inputNumber + 2) that would add 2 to each number and make the spreadsheet display (3, 4, 5, 6, 7)?

I've previously filed a feature request which includes something along these lines, but unfortunately there has been no update on that front.
In the mean time: I think Appian's suggestion (which would probably work decently well in your case) would be to create a View where you do the necessary calculation directly in the column definition, and use that view as the basis for your export, rather than the base table.
