I am not clear in which case it is more advantageous to use queryrecord instead of queryentity, I understand that the greatest benefit is when I have many related records, but if what I want is to make functions of a single entity with several calculations to later use in the processes, which is better ?

The way into the future with Appian is Records. I use synced record aka Data Fabric whenever possible.
