we have a scenario like we have to decide which flow should execute based on the data present in the Word document or PDF document.
So my question would be can we read the data present in a word or PDF doc and get the data into a PV.

The data present in a PDF or Word document is the text in that document. Your scenario then turns into extracting the text from the document and then making a decision based on that text. Take a look at the Get PDF Text function in the PDF Tools plugin for the first case. For the second case, there's the Search And Replace Text in MS Word Document plugin, which might help. In the worst case, you can modify it so that it allows just searching instead of search/replace.
we used an integration Service Bus and we got the response from that using an API call
