Escalation Alert header change

You can actually edit the message by navigating like below;

User Input Task > Escalations > Edit Alert Message >

Remove the pp!name in the Subject/Type in your own message in the Expression Editor.

I want to change the header in the above screen shot "The task "My Task name" in the process "My Process name" has been escalated". 

Sorry, I have miss understood your requirement.

As far as I know, that is not changeable. But there is a work around(which might be ugly), you can actually Select Send Message Event on the Escalations Tab which when escalated would send a message to a listening Process Model(with Receive Message) which sends an Email using Send Email Smart Service and that is where you can actually have a better control over the content of the Email.
