When using the combination of a CDT and Datastore as the main content for a process model, is the data stored into memory (pv) as well as the RDBMS or just to RDBMS (Datastore entity)?...

The data will be stored in both memory as a pv and the RDBMS. Once the process completes and is archived/deleted the data will only be in the database.
