Here, you can create calendars that define the working days for the year that can be saved. Then, when you call the several functions that start with "cal" (e.g. caladddays, calisworkday), specify the calendar name you want to use and the calculation will take those holidays into account.

Hmm, I thought that there was a way to create a new process calendar from a plug-in, but I don't see it in the AppMarket. I'm not aware of any other OOTB way to update the calendar programatically, but you could probably create your own plug-in.

The other option you have is to create your own calendar and save the holidays / working hours in the database. Then, you could create any kind of UI you want to manage that, although you'd need to query from the database and do some expression manipulation to actually use the calendar.
