Will using a!querySelection to return only selected fields improve the overall query performance or is the selection done post querying?

Yes, in general, selecting specific columns should improve performance as far as I've seen. This becomes most obvious when selecting a large chunk of data (i.e. many rows and/or many columns) and selecting down to only one or two columns.
