I'm looking for below information as to what can be monitored w.r.t logs
1. Infrastructure Level
2. Platform Level
3. Application Level.
The idea is to integrate with third party monitoring tool and extract the logs.

This is a pretty broad question - have you looked at the documentation about logging? Appian has dozens of logs, some at all three of the levels you mentioned. You can also use Log Streaming to share many of these logs with third party tools.
Thanks Peter. Documentation about logging helps to some extent. We are working on-premise, so is the Log Streaming same for both hosting ?
If you're on-premise you could try the log reader plugin. This allows you to query the data directly from the logs. Then, you can expose it using a Web API or write to a database on a timer or something like that.
