We've taken some time to build a record type and now, we would like a similar record with a subset of the data in a different site. Is there a way we can copy one record type and use it elsewhere with some modifications?

Is the Record Type you want to create pointing at the same datasource? That is, is it effectively the same list of Records, but with some differences that you want for a different Use Case? Because I would recommend you do NOT create what would be in effect a duplicate Record Type, because of the dual maintenance impact.
If it is a difference datasource can you elaborate on what's the same and what needs to be different?
The record type will be pointing to the same datasource. What will be different is the default filter, columns and user actions. Some columns will be hidden for certain users.
Record List View columns and User filters have a 'Visibility' attribute that you can use an Expression to control.
Default filters can also be applied (or not!) using an Expression.
I would strongly encourage you to use that capability rather than duplicate the Record Type..
Oh, I didn't know you could use an expression to apply default filters. How is this done?

There is local help in the Record Type. Here's a screenshot of an example where I've just started to configure this:
You can use the 'applyWhen' attribute to run a rule to determine if the User should or should not have this filter (or filters if you have many you want to apply) applied.
