In our use case the user goes through a series of chained forms before submitting a request; all of the chained forms are in a sub process. How do we setup escaltions in this scenario? - the requirement is the user should submit the request 5 days within initiation of the request. If I setup escaltions for the sub-process as such, I am not able to get the task properties(based on which form the request is stuck at) which I need to send out in the alert triggered by the escalation. What would be the best approach here?...

Would it fit your use case to set up an escalation on all of the chained forms in the sub process? When you configure the timer event for each escalation, you can select "Escalate at the time and time specified by this expression" which should be the same for every escalation created: a date-time variable set to 5 days after the initiation of the request.
