Created 2 pv! variables(of type 'date' and 'date and time') with a value =now(). When I display these variables in a grid, the field of type 'date' shows the correct date and time, whereas the date field shows the current date+1. Anyone encountered this before?...

For the date, can you try todate(local(now()))? Check out forum.appian.com/.../Conversion_Functions for more info on todate() and local().
