We are a cloud customer and are looking to validate the content of outgoing emails. Is there a log or audit history that we can access to verify the subject, content, and addresses of outgoing emails?...

Since Appian is most likely configured to use your corporate SMTP server, you should be able to get this information from your mail admins.
