I was attempting to use the toDateTime function.
In its documentation it says

Your result output is converting the GMT value back to your local time zone (note the documentation it says the value will be GMT).
Thus, "1/22/2014" at midnight GMT, would be displayed as 1/21/2014 at 7 PM EST.
