Hi,
I am using the Text Doc from Template to create a formatted text file which is being saved in a Documents folder. How can I move/copy this text file to a network share on our network?

There is no OOTB function for this. You need to build a custom plugin.

Take a look at the Appian Collab / Filesystem Utilities plug-in so you don't have to create your own custom plug-in available for download here in Appian Forum under the "Shared Components" record (forum.appian.com/.../all)- Smart Services or via direct link forum.appian.com/.../summary
