We are currently using the email poller functionality to initiate processes in Appian. One of the limitations of this functionality, is that the email must be in Plain Text format in order for Appian to read it. Is there a workaround that can be implemented so that Appian can read in HTML formatted emails?...

Appian ships with a striphtml() function to facilitate this... There should be no functional different in retrieving a plain text vs html email..
striphtml() Converts an HTML string into a plain Text by converting <br>, <p>, and <div> to line breaks, stripping all other tags, and converting escaped characters into their display values
