Can't we edit the values of CDT variables from Process tab? I could see Edit option only against variables which are of simple type. How do we correct values in case of any exception?...

Open up the process instance and add a Script task. Make your CDT changes as you'd normally do in this script task (for e.g. cdt.element=value) once done, run this node in monitoring mode.
