I have the requirement where some task is assigned to user and that task has a deadline. If the user is on leave for 1 or 2 days, the deadline of the task should increased correspondingly. Can anyone please help me how to achieve this?

Interesting requirement. If the assignee is not available, just let the client wait !?!?
The plugin "Task Smart Services" has a node to set the task deadline. So you could run a process that fetches the tasks assigned to that user (Process Report) and then updates the deadline according to some "logic".
I'm with Stefan, this is a peculiar requirement.
Normally this type of issue is dealt via an escalation. If a task is not actioned within a certain period of time, either it is reassigned back into the group or an alert is sent to someone (backup, manager etc) for immediate action since most SLAs are usually not dynamic.
