We want to do a performance test using LoadRunner and actually don't have much experience in LoadRunner[noob], so wanna make sure we start on the right foot. are there any configurations in custom properties? Jboss configurations? Apache? and LoadRunner? any advice is much appreciated. ...

We do not have experience with LoadRunner but several folks here use it for perf testing. You should not have to change any settings to your site, LoadRunner should essentially work like a browser.
Testing using just the Admin account would not be valid, you should at least have an account for each role.
Have a look at this doc page:

It provides a lot of useful content regarding perf testing.
