I'm connected to Salesforce and have mapped fields to display in a list, but only a few of them are showing in the Record List. However, when I fetch the data, I'm able to retrieve all the fields. Why aren't all the fields appearing in the Record list?

The record list is a separate item that you need to configure to show the fields you need.

I suggest to check the Appian documentation for how to modify the list view in records. This is also covered in all Appian trainings.
Go to the record type, go to the list, open the edit list, the add the fields you want.
