Using the example from forum.appian.com/.../SAIL_Recipes.html you can definitely modify the logic to display anything else. I still think a dropdown makes more sense since values in a picker also have a value and a label but if you need a different thing then you can do it.

In the example there's no fancy logic, it's simply showing the dropdown and hiding the picker; the dropdown gets its values from the same variable as the picker.
