Is there a way to format text color? I've already looked at the documentation (using text & richtext functions) but it's not actually changing the color of the text, but rather, outputting literally what I've entered.
Is this not supported anymore or is there a work around for it?

Are you doing this inside a Rick Text component? If so, can you provide a snippet of sample code which isn't working for you?

Actually, I think the documentation you've screenshotted is probably referring to old-style "Rich Text" form components found on classic (non-mobile-enabled) forms. I don't think there's any way (yet) to manipulate text color on SAIL forms.

Yeah that's right - the documentation is a little confusing, but this is referring to a pre-tempo/pre-SAIL rich text feature.

Here's a snippet you can refer to.

To be specific, form components are the ones that are created using Forms Designer.

Yes, it is deprecated. The feature was available in Appian portal, but as you can see, doesn't output the desired response in Tempo.
