Well every other tool provides a "Watch Variable" feature. We I can date back to Visual Basic 6.0 around 2000 which had this feature. Why not Appian. Well the "Process History" feature does provide an option to watch all the process variables however not at the node level. It does not tell in which node of the process model the variable changes. This is an important feature including "Break Points". I would suggest Appian incorporates this feature in the future version atleast to make trouble shooting around variables a lot easier....
