We have a requirement to send and email with attachments and accept email with attachments.
When the email comes back, we need to trigger a task/process with the attachments attached to the task. What I am not sure is how to attach the incoming attachments to the process/task from the incoming email...

Yes, from the description for that property: "This property returns all attachments sent with the email. All attachments, by default, are uploaded to a user-specified folder within Document Management."
