I'm doing some research and I've come across a question that I'm sure of the answer but I need to confirm.
If we own our own Appian enterprise installation, is Appian RPA and AI available to us? Or is strictly for Appian Cloud?

Appian RPA will only be available in the cloud starting with 20.1. However, Appian AI is available to both cloud and on-premise customers. Here's some more information on the AI services available: https://docs.appian.com/suite/help/19.4/Appian_AI.html.
