I recently made and published a portal that was working perfectly, but once I added a page that referenced a recordType via local variable, my site would publish, but not allow me to move past the home page. Whenever I click a link I get an error that says "Could not decrypt bindings."
Any idea what's happening here?

Have you checked activity log on Portal object for more details about the error?
Check the encryption key configuration in the Appian Admin Console. Make sure that the encryption key is properly configured and that the key is valid. Check the logs for any error messages that may provide more information about the issue. it the cause of the error and how to resolve it.
logs showed this message: ERROR 2023-04-17T16:47Z An error occurred while trying to read the security token from "/conf/appian.sec". No security token will be sent when connecting to engines.Still not exactly sure what it means. Do the API keys for portals expire after a while? I've had this portal up for a few months
Binding error usually arises when there are changes or modifications made to the portal's dependent objects and it republishes itself.
Normally, this should not happen when the application is stable. However, you can simply refresh the page to resolve the issue.
I tried that. It worked for a while, but then stopped working. Ultimately I ended up creating a new serviceaccount in the admin console and removed the old service account for the portal. That cleared things up.
