I would like to showcase Process KPI Measurement in a Dashboard interface. How can I evaluate and measure the processes and build a report for KPIs in Appian based on those metrics?

You can use a Process Report if you only need to measure the executions of the process, the average time, etc...
If you need to measure the tasks too you can use a Tasks Report having a process model as the context of the report.
